CARROTS AND HORSERADISH SAUCE 
8 med.-sized carrots

Cut in one inch pieces and cooked until NOT well done, or crispy.

SAUCE:

1/2 c. mayonnaise
1 tbsp. minced onion
2 tbsp. horseradish
2 tbsp. carrot cooking water

Mix sauce ingredients together and pour over cooked carrots. Sprinkle with bread crumbs (optional) and bake at 350 degrees until hot - about 20 minutes. Serves 4-6.

I found that 3 pounds carrots and 3 times the sauce recipe served 14 amply. Enjoy!
