CHILI CON CARNE 
2 tbsp. vegetable oil
1/2 c. thinly sliced onion
1/2 c. diced green pepper
1 clove garlic, crushed
3/4 lbs. ground beef or turkey
3/4 c. boiling water
1 can peeled tomatoes (about 20 oz.)
1 or 2 tbsp. chili powder
1/8 tsp. paprika
Salt to taste
2 c. canned kidney beans

Heat oil in kettle. Cook onion, pepper, and garlic about 10 minutes. Add meat. Increase heat; stir until meat has browned. Add water, tomatoes, chili powder, paprika, and a little salt. Cover; cook over low heat about 45 minutes. Add beans; cook 30 minutes. Adjust seasoning to taste before serving. Serve over rice. Yield: 4 to 5 servings.
