CHICKEN PARMESANA 
2 whole chicken breasts, split, skinned and boned
4 thick slices Mozzarella or Provolone cheese
1 tbsp. oil
1 tbsp. butter
Freshly grated Parmesan cheese
2 tbsp. flour
1/8 tsp. pepper
1/2 tsp. salt
1 recipe Grandma Monday's Sauce
1 lb. your favorite pasta

This meal takes less than 30 minutes to prepare. Put the sauce onto warm up. Put salted water onto boil. Combine the flour, salt, and pepper on a piece of waxed paper, set aside. Place chicken between 2 pieces of plastic wrap. Flatten to about 1/3 inch with a flat mallet.

Dredge the chicken in flour mixture. Heat butter and oil in a large skillet. Quickly saute chicken until golden on both sides. Remove skillet from heat. Place 1 slice cheese on each piece of chicken. Cover skillet. This will allow cheese to melt. If you've timed it right, the water will be boiling about now. Cook pasta (we like vermicelli because it cooks quickly) al dente. Drain. Toss with a little butter and a little Parmesan cheese. On each plate, place some pasta. Ladle out some sauce, then top with chicken. Put some more sauce on top. Sprinkle with Parmesan and serve.
