EMERALD SALAD RING 
1 pkg. lime Jello
3/4 c. shredded unpeeled cucumbers
1/3 c. slivered almonds
3/4 c. hot water
1 c. cream cottage cheese
1 c. mayonnaise
2 tbsp. grated onions

Combine Jello and water; cool until slightly thickened. Add drained shredded cucumber and grated onion. Fold in the remaining ingredients and pour into a ring mold.

For double recipe: 1 pkg. lemon Jello 1 tbsp. lemon juice 1 tbsp. vinegar

Add the above ingredients and double all other ingredients, except the mayonnaise -don't quite double that.
