FRUIT COCKTAIL PIE 
1 lg. can fruit cocktail, drained
2 pkgs. Knox gelatin
3/4 c. sugar
1/2 tsp. salt
1 c. syrup from fruit cocktail
3 eggs, separated
1 pt. sour cream
1 tsp. lemon rind
1/4 c. lemon juice
1/2 tsp. almond flavoring
1 baked pie shell

Mix gelatin and 1/2 cup sugar, add salt and syrup, add slightly beaten egg yolks, stir on moderate heat until thickened (like cream). Pour into a large bowl and beat in sour cream, add lemon rind and juice, flavoring and 2 cups fruit. Chill, stirring once in a while. Beat egg whites until foamy and gradually add remaining sugar, beat until peaks form. Fold into chilled fruit mixture. Put into baked pie shell and refrigerate.
