OKRA AND RICE FRITTERS 
1 1/2 c. chopped okra
1 1/2 c. cooked rice
1 c. chopped tomatoes
3/4 c. chopped onion
1 1/2 tsp. salt
3/4 tsp. pepper
1 tsp. baking powder
1 tbsp. sugar
1 c. cornmeal
1 c. flour
2 eggs, beaten
Oil for deep frying

Mix first 8 ingredients. Mix flour and cornmeal. Pour the eggs over okra mixture and combine. Add meal and flour mixture and stir together. Drop the batter by tablespoons into hot oil and cook until well browned.
