FRENCH TOAST WITH POWDERED SUGAR 
8 slices bread, slightly dry
1 c. pancake mix
2 eggs
1 1/4 c. milk
1 c. sugar
2 c. cooking oil

Make powdered sugar by putting the sugar in the blender and blending on high for 10-15 seconds. Set aside. Mix pancake mix with eggs and milk. Put oil into frying pan over medium high heat. Cut the crust from the bread slices and then cut the bread diagonally so you have 2 triangles from each slice of bread. using tongs, hold 2 triangles together and dip them into the batter, completely covering the bread with the batter. Drop the bread into the hot oil.

Cook for about 20 seconds then turn them over with the tongs and cook or another 20 seconds until both sides are golden brown. Drain on paper towels and sprinkle with powdered sugar.
