3 eggs, beaten 2/3 c. pumpkin 1 c. sugar 1 tsp. salt 1 tsp. baking soda 1 tsp. cinnamon 3/4 c. plain flour Mix all ingredients together. Spray an oblong cookie sheet with cooking oil and line with wax paper. Pour mixture into cookie sheet and bake at 350 degrees for 15 minutes. Turn out onto a damp tea towel. Peel off wax paper carefully and then roll up into towel. Let cool completely. Unroll onto aluminum foil. Spread filling on top. Re-roll pumpkin bread with filling on top. Wrap in aluminum foil and place in a plastic bag and freeze. FILLING: 8 oz. cream cheese 2 tbsp. butter 1 c. confectioners' sugar |
