SOUTHWEST CHICKEN SALAD 
1 lb. chicken breast strips, cut into chunks
1/2 c. celery
1/2 c. chopped walnuts
1/2 c. red seedless grapes
1/2 c. mayonnaise
1 tbsp. ginger
1 tbsp. lemon juice
1 pkg. whole wheat pita pockets

Cook chicken in skillet. Combine all ingredients. Refrigerate at least an hour before serving. Stuff in whole wheat pita pockets.
