EASY CHEESECAKE 
2 (8 oz.) pkgs. cream cheese, softened
1/2 c. sugar
1/2 tsp. vanilla

Mix on medium speed until well blended. Blend in 2 eggs. Pour batter into a ready to use 9" graham cracker pie crust. No springform needed. Bake at 350 degrees for 40 minutes or until center is almost set. Cool, refrigerate for 3 hours. Top with assorted fresh fruit. 8 servings.
