OSYTER PIE 
Vegetable oil
1/2 c. Half and Half
1 pt. oysters (reserve liquid)
2 tbsp. all-purpose flour
2 tbsp. finely chopped green onion
1/4 tsp. thyme
Hot Tabasco sauce to taste
3/4 c. saltine cracker crumbs (approximately 22 crackers)
1 tbsp. butter, melted

1. Heat oven to 400 degrees. Lightly oil a 1 quart shallow baking dish. In a small saucepan combine Half and Half, 3/4 cup oyster liquid and flour; whisk mixture smooth. Cook over medium heat until thickened. Fold in green onions, thyme and hot sauce.

2. Place half of oysters on bottom of prepared baking dish. Top with half of sauce and crumbs. Repeat layering, remaining oysters, sauce and crumbs. Drizzle butter over top.

3. Bake until bubbly and oysters have curled - about 20 to 25 minutes.
