CURRIED TURKEY SALAD 
2 1/2 c. cubed, cooked turkey
1 apple, diced, skin left on
1/2 c. diced celery
1/2 c. chopped pecans or walnuts
1/2 c. mayonnaise
1/2 c. sour cream or yogurt
1/4 c. chopped green onions
2 tbsp. fresh lemon juice
2 tsp. curry powder
3 tbsp. minced parsley
3 tbsp. flaked coconut
Salt & freshly ground pepper to taste

In a large bowl, mix the mayonnaise, sour cream, lemon juice, curry powder, parsley and coconut. Blend well. Toss in the turkey, apples, celery, nuts and onions. Stir well. Chill for a few hours before serving. 4 servings.
