ORANGE JUICE GEMS 
1 orange
1 stick butter, softened
2 eggs
2 1/2 c. sifted flour
1/2 tsp. each salt and baking soda
1 c. orange juice
1 c. sugar
1 c. chopped pecans
2 tsp. baking powder

Quarter orange, remove seeds and white pulp. Leave rind on. Put the orange pieces into a blender with 1 cup of orange juice and process until the orange is ground up. Set aside.

In a separate bowl, cream the butter and sugar thoroughly and beat in the eggs, one at a time. Sift together the flour, baking powder, salt and soda. Add the flour mixture to the creamed butter a third at a time, alternating with the orange juice. Mix well but quickly. Fill greased muffin pans 2/3 full and bake at 350 degrees for 20 to 25 minutes.
