PORK ADOBO 
2 lb. pork roast
2 cloves garlic
1/4 c. vinegar
1 bay leaf
1 peppercorn, crushed
1/2 tsp. salt
1 tbsp. soy sauce
1 tsp. brown sugar
1 1/2 c. water

Cube roast and saute. Add garlic. When brown, add remaining ingredients. Simmer until tender. Add water if necessary. Taste. If too sour, add a pinch of sugar. If flat, add vinegar. Add 1 or 2 tablespoons flour to juice to make gravy. Serve over hot rice.
