CAESAR SALAD 
1 clove garlic, split
1 tbsp. lemon juice
1 tsp. soy sauce
3 tbsp. olive oil
1 lg. head romaine lettuce (about 8 cups in pieces)
1 egg
1/4 c. grated Parmesan cheese
1/2 c. whole wheat croutons
2 tbsp. capers
Pepper

Rub salad bowl with garlic and discard. Add lemon juice, soy sauce, and oil and beat with a fork until smooth and creamy. Tear lettuce into pieces and place in the bowl.

Cook egg in the shell for 1 minute in boiling water, break over greens, and toss. Add cheese, croutons, capers, as desired and a generous grinding of pepper. Toss and serve. Serves 4.
