PEAR CHUTNEY 
8 c. sugar
2 lbs. brown sugar
40 lg. pears
6 c. cider vinegar
2 c. raisins
2 c. currants
4 cloves garlic
6 sticks cinnamon
4 tbsp. whole cloves
2 tsp. chili pepper flakes
4 tsp. salt
1 tsp. celery salt
2 tbsp. cinnamon
1 lb. candied ginger or fresh, to taste
8 tbsp. cornstarch
2 tsp. allspice

Put cinnamon sticks, cloves, chili pepper flakes and garlic in a cheesecloth bag which can be fastened. Put all ingredients together and bring to a boil. Remove the bag when you think the mixture is seasoned properly. Makes about 10 pints.
