RUM CHICKEN 
1/4 c. melted butter
1/4 c. orange juice
1/4 c. light rum
1/2 tsp. orange zest
1/2 tsp. salt
1/8 tsp. ground ginger
1/8 tsp. pepper
1 crushed garlic clove
1 (3 lb.) fryer, cut up

Preheat oven to 350 degrees. Combine all liquids and seasonings. Brush chicken parts with this generously. Place chicken in a shallow baking dish. Bake for 1 hour, basting occasionally.
