COOL AS A CUCUMBER SOUP 
1 qt. buttermilk (Lady Lee, Sunnyside or Crystal is best)
2 lg. cucumbers, peeled, seeds removed and cut in lg. chunks
4 green onions, cut in 2 inch lengths
1 tsp. dried dill or 1 tbsp. fresh dill
Salt and pepper

In a food processor or blender, combine buttermilk, cucumber chunks, green onions and dill. Process to smoothness desired - some chunkiness adds textural interest. Transfer to an attractive bowl, season with salt and pepper to taste and chill. Add a few more sprinklings of dill on each serving for color. Serves 4 to 6.
