HEARTY MUFFINS 
1 c. unbleached flour
1 c. whole wheat flour
1 c. bran or oatmeal
1/2 c. sugar
1/2 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon
1 tsp. baking powder
1 egg
1 1/4 c. milk
1/3 c. oil
OPTIONAL: Raisins, nuts, apples, chopped

Combine flours, bran or oatmeal, sugar, baking soda and powder, salt and cinnamon. Beat egg and add to flour mixture. Add milk and oil and hand mix until the flour mixture is moist. Add raisins, nuts or apples if desired. Bake in preheated 400 degree oven for 12 to 15 minutes in muffin tins. Makes 1 dozen.

This is a true muffin recipe - not sweet, more like a bread flavor, with a hint of the cinnamon. The inside texture was soft, but not mushy, and the top had a little bit of crust. It would make a nice breakfast muffin with a bit of jam. I liked it plain. I used mainly organic ingredients including walnuts. This is definitely a keeper in my recipe file.
