SAUSAGE AND ZUCCHINI CASSEROLE 
1/2 lb. sausage
1 onion, diced
1 can celery soup
1 can water
2 c. grated cheese, reserve 1/3 c. for top
2 c. zucchini
1 roll Ritz crackers, crushed
butter

Fry sausage and onion together, breaking sausage up. When brown, drain well. Combine sausage with soup, 1 2/3 cups cheese, and 2 cups zucchini. Put 1/2 mixture in casserole. Cover with crushed crackers about 1 half roll. Add rest of mixture. Cover with rest of cracker crumbs and 1/3 cup cheese on top. Dot with butter. Temperature: 350 degrees. Time: 15 to 20 minutes.
