CAJUN CAKE AND TOPPING 
2 c. flour
1 1/2 tsp. baking soda
2 eggs
Pinch of salt
1 1/2 c. sugar
1 lg. can crushed pineapple with juice

Mix all ingredients by hand for 1 minute. Pour batter into a greased 11 x 14 inch pan. Batter will be watery. Bake at 300 degrees for 30 to 40 minutes. Cake will be light golden in color.

TOPPING:

1 c. sugar
1 sm. can Pet milk
1 stick butter
1 tsp. vanilla
1 c. shredded coconut
1 c. chopped pecans or walnuts

Put first 4 ingredients in a small saucepan. Mix well and bring to a boil. Let simmer 5 minutes. Stir occasionally. Remove from heat. Mix coconut and nuts into boiled mixture. After mixing, spread on hot cake.
