ZUCCHINI CASSEROLE 
2 or 3 sm. or med. zucchini
1 sm. can tomato sauce
1 can tomato bits (or dice 1 can tomatoes)
1 pkg. Mozzarella cheese, shredded (or any kind you prefer)
1 lb. hamburger
1 med. chopped onion
5-6 crushed cracker crumbs
Salt and pepper to taste
Oregano sprinkled on top, if desired
Parmesan cheese, if desired

Spray Pam or grease a medium square baking dish or bake in a regular size iron skillet.

Brown hamburger and onion in skillet, drain, peel and slice thinly the zucchini in baking dish. Add tomatoes and sauce, cheese, hamburger and onion, stir together. Save a little cheese for top. Add cracker crumbs. Can also sprinkle Parmesan cheese on top, if desired. Bake at 350 degrees for 45 minutes to 1 hour. When zucchini is soft, casserole is done.
