OPEN PIT SPARERIBS 
4 lbs. spareribs (or beef short ribs)
1 tbsp. celery seed
1 tbsp. mustard seed
1 c. brown sugar
1 c. Open Pit barbecue sauce
Liquid smoke
Salt and pepper

Cut ribs into serving pieces. Brown. Brush liberally with liquid smoke and season with salt and pepper. Place in large roaster pan and sprinkle with celery seed, mustard seed, and brown sugar. Stir well. Cover and bake at 350 degrees for 1 hour. Drain juice off. Coat with barbecue sauce and bake, uncovered, for 1/2 hour more at 325 degrees, basting occasionally.
