2 1/4 c. Pillsbury's Best enriched flour 1 tsp. double acting baking powder 1/2 tsp. baking soda 1/2 tsp. salt 3/4 c. butter 1 c. sugar 2 unbeaten eggs 2 tbsp. milk 1 tsp. French's vanilla 1 c. Faunsten's pecans, chopped 1 c. dates, chopped 1/3 c. maraschino cherries, drained and chopped 2 1/2 c. corn flakes, crushed coarsely Sift flour, baking powder, soda, and salt together. Cream butter, and gradually add sugar, creaming well. Add egg, milk, and vanilla; beat well. Blend in the dry ingredients gradually; mix thoroughly. Add pecans, dates, and cherries. Mix well. If desired chill dough before shaping. Drop by rounded teaspoonfuls into corn flakes. Toss lightly to coat; shape into balls. Place on greased baking sheets. Top each with 1/4 maraschino cherry. Bake in 375 degree oven 12-15 minutes. If you use Pillsbury's Best Enriched Self-Rising Flour (sold in parts of the South), omit baking powder and salt; decrease soda to 1/4 teaspoon. |
