QUICK - AS - A WINK CHERRY CAKE | |
1/2 (1 lb.) can cherry pie 1/4 c. chopped pecans 1 pkg. Jiffy yellow cake mix 5 tbsp. instant vanilla pudding mix 1/4 c. soft butter 2 eggs 1/2 c. water Line 9 inch round baking dish with wax paper. Sprinkle nuts evenly over bottom. Spoon pie filling over nuts and set aside. Combine cake mix, dry pudding mix, butter, eggs, and water. Beat with electric mixer on medium speed 3 minutes. Pour cake batter evenly over cherries in dish. Microwave cook on high 12 minutes, making 1/4 turn every 3 minutes. Invert on serving plate. Decorate top with coconut (if desired). |
