POTATO SOUP 
3 c. water
2 1/2 c. diced potatoes
1 medium onion, diced
3 carrots, grated
3 tsp. beef stock base
3 c. milk
2 tsp. chopped parsley
Salt and pepper
1 c. real sour cream

Combine water, potatoes, onion, and carrots in 3 quart saucepan. Simmer until potatoes are tender, 15 minutes. Mash potatoes in liquid for thickening. Stir in remaining ingredients and heat gently. Serves 6-8.
