PRISSY'S MUFFINS 
6 c. flour
2 1/2 tsp. baking soda
2 1/2 tsp. cinnamon
1 1/2 tsp. salt
5 c. sugar
1 1/2 tbsp. vanilla
2 1/2 c. oil
10 eggs
8 c. shredded carrots
5 c. shredded coconut
3 c. crushed pineapple, drained (reserve juice)

Mix flour, soda, cinnamon and salt. Stir sugar, vanilla, oil, and eggs and mix together with dry ingredients. Fold in carrots, coconut and pineapple (if too dry add pineapple juice from drained pineapple). Fill greased muffin cups 3/4 full. Bake at 375 degrees 20-25 minutes. Makes 5 dozen.
