FRIED CATFISH 
Fish
Corn meal
Salt and pepper
Oil

After fish are cleaned, salt and pepper them and roll them in corn meal. Heat oil (enough to fry your amount of fish) in iron skillet. Fry fish, one at a time, unless they are very small. As one piece browns on both sides, remove and put in another piece until all fish are cooked. Additional oil may be needed. Serve while hot with hush-puppies.
