CRABMEAT AU GRATIN 
1 or 2 stalks celery, chopped
1 c. onions, chopped
1/4 lb. butter
1/3 c. all-purpose flour
1 (12 oz.) can evaporated milk
2 egg yolks
1 tsp. salt
1/2 tsp. red pepper
1 lb. lump crabmeat
1/2 lb. Cheddar cheese, grated

Preheat oven to 375 degrees. Saute onions and celery in butter until clear. Add flour; blend until smooth. Slowly add evaporated milk, stirring constantly over medium heat. Add egg yolks and mix well. Season with salt and pepper. Heat 5 minutes over low heat, stirring constantly. Place crabmeat in 2 quart casserole dish. Layer 1/2 the grated cheese followed by the sauce mix and top with remaining cheese. Bake uncovered for 10 to 15 minutes until golden brown.
