CRABMEAT AU GRATIN 
2 stems celery, chopped
1 c. onion, chopped
1/4 lb. butter
1/2 c. all purpose flour
1 (13 oz.) can evaporated milk
2 egg yolks
1 tsp. salt
1/2 tsp. red pepper
1/2 tsp. black pepper
1 lb. white crab meat
1 c. shredded cheddar cheese

Saute onion and celery in butter until wilted. Blend flour into mixture. Pour in milk gradually and stir constantly. Add egg yolks, salt and pepper, cook 5 minutes. Gently fold in crab meat and mix well. Pour into casserole. Sprinkle cheese on top then bake 375 degrees for 10 to 15 minutes.
