HOT CHICKEN SALAD CASSEROLE 
2 c. cooked chicken, chopped
1 can cream of chicken soup
1 c. chopped celery
1/2 tsp. salt
Dash pepper
1 tbsp. lemon juice
2 hard boiled eggs, chopped
1 can water chestnuts, sliced
3/4 c. mayonnaise
1 stick butter
1 tube Ritz crackers, crumbled

Mix all ingredients except butter and crackers. Put in a casserole dish. Melt the butter and mix with the cracker crumbs. Sprinkle over casserole. Bake at 350 degrees for 30 minutes.
