RED BEET RELISH 
6 red beets, cooked and peeled
6 green peppers
1 stalk celery
3 lg. onions
2 1/2 c. vinegar
1 1/2 c. water
3 c. sugar
3 tsp. salt
1 1/2 tsp. pepper

Grind vegetables. Combine remaining ingredients and add vegetables. Boil for 20 minutes. Put into sterilized jars and seal.
