SUGAR CURE MEATS | |
3 tbsp. brown sugar 1 tbsp. red pepper 2 tbsp. black pepper 1 c. salt 1 fresh ham Mix mixture together. Take a white cloth or old sheet, lay open on table or large work area and lay 3 or 4 thickness of newspaper on top of cloth. Sprinkle above mixture on newspaper, then take fresh ham and roll in mixture to coat, patting in all cracks. Wrap newspaper around ham, then wrap cloth around as tight as possible. Leave lay until cloth is wet entirely, then hang up in a vented room (do not let it freeze). Let hang for approximately 2 months or longer. Unwrap, wash off and trim off molded areas. Slice and fry. |
