MILKLESS, BUTTERLESS, EGGLESS
SPICE CAKE
 
1/2 c. sugar
1/2 c. shortening
1 c. molasses
2 1/2 c. flour
2 tbsp. cocoa
1 1/2 tsp. salt
1 tsp. allspice
1 tsp. cinnamon
1/2 tsp. cloves
1/2 tsp. ginger
1 c. hot coffee

Cream sugar and shortening and add molasses. Add flour, to which other dry ingredients have been added. Mix thoroughly, then add hot coffee, stirring constantly. Beat well. Bake in one or more greased and floured cake pans, depending upon thickness desired. Bake in 350 degree oven for 45 minutes. Cake may be eaten plain or iced.
