BROCCOLI CASSEROLE 
2 pkgs. frozen chopped broccoli
1 c. grated Cheddar cheese (mild)
1 can cream of mushroom soup
1 c. mayonnaise
2 eggs, well beaten
2 tsp. minced onion
Salt and pepper to taste

Cook and drain broccoli. Mix all ingredients. Pour into greased casserole dish. Crumble Ritz crackers on top and dot with butter. Bake at 350 degrees for 40 minutes.
