POTATO CANDY 
3/4 c. cold mashed potatoes
4 c. powdered sugar
4 c. shredded coconut
1 1/2 tsp. vanilla
1/2 tsp. salt
8 sq. baking chocolate (I prefer sweetened)

Mix potatoes and powdered sugar. Stir in coconut, salt and vanilla. Blend well. Press into buttered 9 x 13 inch pan. Melt chocolate over hot water. Pour over above mixture, cool, cut into 32 pieces. I prefer to roll mine in little balls and dip into different colored melted chocolate. Put into freezer until set and take out and box or whatever container you wish to store them in.
