RED BEANS AND RICE 
1 lb. red beans
2 stalks celery, minced
Hot cooked rice
2 lbs. smoked sausage
1 lg. onion, chopped
1 lg. green pepper, chopped
2 tsp. salt
1/2 tsp. pepper

Sort and wash beans, chopped onions, celery, green pepper and garlic. Simmer with water and bring to a boil. Reduce heat and let simmer 2 to 2 1/2 hours or until beans are thick and gravy is formed. Cut sausages. Put rice in middle of plate and red beans. Place sausage on top of rice.
