EGGPLANT CASSEROLE 
2 lg. eggplants, cooked & mashed
1 c. bread crumbs
1 c. cracker crumbs
1/4 c. butter
2 onions, chopped
2 bell peppers, chopped
1/2 tsp. black pepper
1/4 tsp. salt
3 cans Vienna sausage, drained
1 can smoked sausage with liquid

Combine all ingredients and mix well. Have pan sprayed with vegetable spray. Bake until brown at 350 degrees.
