RED VELVET CAKE 
2 eggs
1 1/2 c. sugar
1 c. oil
2 1/2 c. plain flour
1 c. buttermilk
1 tsp. baking soda
2 tsp. cocoa
1 tsp. vinegar
1 oz. red food coloring
1 tsp. vanilla

Mix all together.

Bake in 4 thin layers at 350°F about 20 minutes.

Icing:

1 box confectioners sugar
8 oz. cream cheese
1 stick butter
1 tsp. vanilla
1 c. chopped pecans

Mix together and spread on cake.
