MATZO - CHEESE KUGEL 
2 tbsp. melted butter
Boiling water
6 matzos
4 eggs
3/4 c. sugar
2 c. milk
1/2 tsp. salt
1 tsp. vanilla
1/4 tsp. almond extract
1 lb. cottage cheese
1/2 c. apricot preserves, melted

Brush 2 quart square baking dish with melted butter. Pour boiling water over matzo, immediately remove to paper towel. Beat eggs with sugar. Add milk, salt, vanilla and almond extract. Beat well.

Place 2 matzos in dish. Spread with 1 cup cottage cheese. Add 2 more matzos and remaining cottage cheese and 2 more matzos. Pour milk mixture over matzo and bake 40-50 minutes in 350 degree oven. Spread with apricots and serve warm or cold. 8 servings.
