MEATBALLS & SAUSAGES | |
1 to 1 1/2 lbs. chopped meat (lean sirloin is my favorite) 6-8 sausages (may be sweet, fennel, hot, etc.) 1 lg. egg (extra large is OK) 1/4 c. Parmesan cheese or Romano 1/2 - 1 c. Italian flavored bread crumbs Prepare Basic Marinara, while simmering, pierce each sausage 3 times with fork. Parboil (plain boiling water) for 5 minutes. Remove from water and cut each sausage in half then place into sauce. Mix chopped meat with egg; add Parmesan (Romano) cheese; continue mixing and slowly add bread crumbs. Mix into meat until just sticky. Roll into desired size meatballs and place into sauce. Cook 1 1/2 hours or until sausages are not pink. |
