CRAYFISH NEWBURG 
8 tbsp. butter
2 tbsp. flour
1 tsp. salt
1 tsp. M.S.G.
1/2 tsp. cayenne
2 tbsp. paprika

Cook above ingredients until proper consistency.

2 c. cream
4 c. crayfish tails
2 tbsp. cognac
4 tbsp. sherry

4 beaten egg yolks

Note: Shrimp may be substituted for crayfish resulting in Shrimp Newburg.
