QUICK ALBONDIGAS SOUP | |
5 cans beef bouillon 3 cans water 1 (28 oz.) can peeled tomatoes (I puree them in blender) if you like chunks can leave whole 2 cans Ortega salsa 1 onion, chopped 1/2 tsp. basil 1/4 tsp. Tabasco sauce 1/2 tsp. Oregano 1 tsp. salt 1/2 c. rice Meatballs Cook all ingredients except rice and meat balls. Simmer 20 minutes, covered. Add 1/2 cup rice and meatballs. Simmer covered slowly for 45 minutes. MEATBALLS: 1 lb. ground beef 1/4 lb. ground pork sausage 1 chopped onion 1 egg 1/4 c. milk 1/2 c. cornmeal 1/2 tsp. pepper 1/2 tsp. salt 1/2 tsp. basil 1/2 tsp. garlic |
