BRAN MUFFINS 
1 lb. egg
1/2 c. brown sugar
1 1/3 c. mashed ripe bananas
1/2 c. raisins or walnuts
1/3 c. canola oil
1 tsp. vanilla
1 c. whole wheat or white flour
1 c. Miller's bran
2 tsp. baking powder
1/2 tsp. baking soda
1 tsp. ground cinnamon
1/4 tsp. salt

Or use three 4 oz. jars baby food or two 6 oz. jars junior baby food (bananas, peaches, apricots, carrots or sweet potatoes, mixed or a single flavor).

Heat oven to 375 degrees. Grease muffin tins. Beat egg and sugar. When smooth, beat in bananas or baby food, raisins or nuts, oil, and vanilla. Let stand 1 minute. Mix flour, bran, baking powder, baking soda, cinnamon, and salt in a large bowl. Add wet mixture and fold into dry ingredients until just mixed. Scoop batter into muffin tins. Bake 15 to 25 minutes, or until brown and springy. Yields: 12 regular or 48 miniature muffins.
