CRUSTLESS QUICHE 
7 doz. eggs
6 lb. shredded baked ham
2 gallons cooked spinach, drained
15 c. shredded Swiss cheese
15 c. shredded Cheddar cheese
1 gallon milk
1 loaf sandwich - sliced bread

Crumble bread into LARGE mixing bowl and soften in milk. Add lightly beaten eggs and cheese. Stir in ham and spinach. Ladle 3 inches deep into shallow baking dishes, coated with non-stick cooking spray.

Bake at 350 degrees for 1 hour or until golden brown and solid. 150 servings. Broccoli or asparagus may be substituted for spinach.
