MERINGUE THAT DOES NOT FAIL 
Beat egg whites until stiff, but not too dry. Add 1/4 cup sugar for each egg white, and a pinch of cream of tartar.

Scant 3/4 c. sugar
1/4 tsp. cream of tartar

Bake in a slow oven about 45 minutes. This should puff way up and stay there.
