2 c. sifted flour 1 tsp. baking powder 1 tsp. baking soda 1 tsp. cinnamon 1/2 tsp. salt 1 c. shortening 1 c. sugar 1 c. cooked mashed pumpkin 1 egg 1/2 c. chopped nuts 1 tsp. vanilla Sift flour with baking powder, soda, cinnamon and salt. Cream shortening and sugar, add pumpkin and egg. Beat well. Add dry ingredients all at once and stir to form a smooth batter. Add nuts and vanilla. Drop large teaspoonful onto greased cookie sheet. Bake at 350 degrees for 10 to 12 minutes. Cool. CARAMEL FROSTING: 3 tbsp. butter 4 tbsp. milk 1/2 tsp. vanilla 1/2 c. firmly packed brown sugar 1 c. sifted powdered sugar Combine butter, milk and brown sugar in saucepan. Boil 2 minutes stirring constantly. Cool, stir in powdered sugar and vanilla. Spread on top of cookies. Makes 4 dozen. |
