BRAZIL-NUT BANANA CAKE 
1/2 c. soft butter
1 1/2 c. sugar
2 eggs
3/4 c. mashed bananas (2 lg.)
2 c. all-purpose flour
1/4 tsp. salt
3/4 tsp. baking soda
1/4 tsp. baking powder
1/4 c. buttermilk
1 tsp. vanilla
3/4 c. chopped Brazil nuts
Slightly sweetened whipped cream

In medium bowl, cream together butter and sugar until fluffy. Add eggs, one at a time, beating thoroughly after each. Beat in bananas. Mix flour, salt, baking soda and baking powder. Add with buttermilk and vanilla to creamed mixture. Beat until blended. Stir in nuts.

Turn into 2 greased and lightly floured 9-inch layer cake pans. Bake at 350 degrees for 25 minutes or until pick inserted near center comes out clean. Let cake stand in pans on wire rack for 5 minutes. Then turn out and turn right side up. Cool.

When ready to serve, spread whipped cream between layers and on top and sides of cake. Makes one 9-inch layer cake.
