PEAR BROWN BETTY | |
3 c. 1/4 inch bread cubes made from firm white bread without crusts 2/3 c. plus 2 tbsp. brown sugar 4 tbsp. butter 2 (16 oz.) cans sliced pears, drain and reserve juice 1 tsp. vanilla Heat oven to 350 degrees. Lightly coat an 8 inch square cake pan with butter. In large bowl, toss bread cubes with melted butter. Drain pears, reserving 1/2 cup juice. In medium bowl, mix pears, 2/3 cup sugar and vanilla together until sugar dissolves. Mix with bread cubes and place in baking pan. Pour reserved juice over all. Cover tightly with foil. Bake 30 minutes. Remove cover, sprinkle with remaining 2 tablespoons sugar over top. Bake uncovered for 30 minutes, or until lightly browned. Serve warm. |
