ENCHILADA CASSEROLE 
1 lb. ground turkey
1 pkg. corn tortillas (soft ones)
1 pkg. taco seasoning
1 jar (16 oz.) taco sauce
1 can kidney beans or red beans
1/2 lb. Velveeta cheese with jalapeno pepper, shredded
1 chopped onion
3/4 c. water (plus)

Brown turkey; add taco seasoning mix. Stir and add enough water so it will be a little soupy. Let simmer and add beans; continue to simmer (do not let mixture get dry, add more water if necessary). In long casserole dish pour 1/2 of taco sauce; place 4 to 6 tortillas in sauce. Pour meat over and add chopped onion, put 4 tortillas on top. Spoon mixture of taco sauce over tortillas. Sprinkle cheese on top; cover with foil; heat at 350 degrees until cheese melts. Just before serving cover with chopped lettuce and tomatoes.
